Fruit & Homemade Granola

 

This is a super easy go-to for breakfast. I eat this or just a plain ol'bowl of beautiful fruits almost every morning! Fruit is best eaten on an empty stomach or at the beginning of any meal. It is best to purchased organic non GMO fruits that are in season, within the area where you live. Although, I have to admit living in New York doesn't give me too many fruit options during most seasons. So, you won't see me sticking by this rule too often!

So grab yourself some of your favorite fruits, a few generous scoops of granola and some non-dairy yogurt (you can find non-dairy alternatives in the natures market section of most grocery and health food stores). Add a few dashes of cinnamon and you are off to a delicious healthy start!

The granola I use is my homemade recipe. I like to add in extra nutrients anywhere I can, so in my granola you will find raw sprouted pumpkin seeds, hemp seeds, chia seeds, coconut flakes, coconut oil, maple syrup and cinnamon. If you are a cereal lover who wants to ditch the processed sugars and artificial flavors, but just cant imagine giving up your morning bowl...give this a try! It's a wonderfully delicious, cost-effective alternative thats sure to leave you happy and healthy!

Recipe

  • Heat oven to 250 degrees
  • Throw your oats on a baking sheet (line with parchment paper) and make sure they are spread out well
  • Drizzle cold pressed unrefined coconut oil and a bit of maple syrup over your oats
    • For 4 cups of oats, use 4 tbls of coconut oil
    • Eyeball the maple syrup
      • If your coconut oil is solid, place it in the middle with the syrup and cinnamon, pop it in the oven, let it melt for about 3 minutes, then use a spatula to turn and coat the oats in the liquid mixture
  • Roast for about 15-25 minutes (turning a few times)
    • Roasting time is based on your desired "Crunchiness"
  • Once oats are golden brown, take them out (they will crunch up a bit more once cooled)

Now for the fun part! Add dried fruits, nuts, seeds, chocolate chunks...anything! My go-to's are raw sprouted pumpkin seeds, hemp seed, hearts, chia seeds, more cinnamon & sometimes chocolate. Store in a glass container and ENJOY!
