Roasted Red Pepper Soup
Theee Simplest roasted red pepper soup you've ever made!
Fresher than fresh. Delicious. Filling. Healthy. Guilt Free. Warm hearty comfort food. YES PLEASE.
Organic Veggies. Fresh Herbs + Spices. And BREAD...because soup + bread equals heaven.
Here's the run down...
- Pre-heat oven to 350 degrees
- Line a baking sheet with parchment paper
- Lay out the following:
- 1 full cup of cherry tomatoes
- 1/4 cup of a white onion
- 2 large carrots (chopped)
- 1 red bell pepper (halved)
- 3 stalks of broccolini
- 4 raw garlic cloves (peeled)
- fresh basil + dill (roughly chopped and sprinkled about)
- Toss all ingredients with some avocado oil (or olive oil) and salt n peppa
- Spread out onto the baking sheet
- Pop into the oven for 30minutes or less
- I prefer about 20 minutes because I like to taste the fresh rawness of crunchy veggies! But, if you want a deep roasted flavor go the whole 30 minutes.
Tip: Don't have one of the veggies listed?! You cant mess up this recipe! Just swap it out for some other healthy green! Try zucchini, asparagus, or even parsnips!

- Pull that golden nourishment from the oven and toss it into your food processor (or blender).
- Add 1/2 cup of flax milk (or rice milk). Blend until smooth.
- If the consistency is still too thick or chunky for your liking, slowly add more milk to reach your desired preference. BUT be forewarned to add the milk slowly!!! Too much will take over this recipe.
