TURMERIC LENTIL BURGERS
THese lentil burgers...oh my!
I hadn't planned on creating these monster bean burgers! I was simply testing out my original recipe and tweaking it a bit to create bread crumb FREE burgers. It's funny that after all that tweaking and no bread crumbs, we ended up eating them on MONSTEROUS Fococcia rolls!
RECIPE
- Preheat over to 350 degrees
- Start by cooking 1 & 1/2 cup of lentils and 2 cups of black beans (I recommend buying dried in bulk)
- Follow the package directions for cooking instructions
- Once cooked, add both to a large mixing bowl and begin to mash them
- Make sure to leave this mix a bit chunky for texture. We want hearty bites!
- Tip: You can do this with a potato masher or muddler.
- Now, its time to add the following:
- 1/2 cup of finely chopped carrots
- 1/4 cup of finely chopped green onion
- 1/2 cup of corn
- Mix well. Get your hands right in there!
- Next, add in the following:
- 1 cup of processed sunflower seeds
- 1/2tsp of Turmeric
- 1tsp of Cayenne Pepper (or a few pinches, depending on your preference of HEAT)
- Dash of Salt & Pepper
- MIX WELL!
- This mixture should roll well into slightly firm patties that will stick to your hand for a few seconds while holding upside down.
- If they feel dry, you can add a table spoon of organic ketchup, but don't over do it.

- Roll 8-10 small to medium sized patties
- Place onto a small baking sheet, lined with parchment paper
- Tip: You can also grease your baking sheet with coconut oil
- Cook in the oven for 30-35 minutes (turn over half way through cooking)
- When you go to take them out, they may seem a bit mushy. Don't worry! They will firm up upon resting for 3-5 minutes.
- While the burgers are cooking...Let's make some Vegan Mayo!
- Get 2 nice and ripe avocados into a bowl with 1tbls of veganaise (you can find this in the refrigerated section of health food stores)
- Mash well. Then, add juice from a whole lemon and whisk until creamy
- You can also add a dash of cayenne here, if you like spicy foods like me!
- Now, its time to set aside your Vegan Mayo and toast some rolls!
- Grab your burgers and place them on the toasted rolls
- Add those toppings!
- Vegan Mayo
- Jalapeno or Pickles
- Tomato Slices
- Argula
- Lettuce
- Fermented Sauerkraut (optional)
It's all about the toppings! If your new to veggie burgers or to the plant-based world in general, be sure to add those toppings. It makes all the difference in the world! This recipe is a great dish to share at a cookout or even just family dinner. Enjoy!
