WHATEVER'S IN YOUR FRIDGE VEGGIE BOWL
LOVELY buddha bowls. My favorite! this is my go-to a few times a week!
Why? Because, you can not go wrong here! Throwing protein, fiber and all kinds of beautiful nutrients into ONE BOWL...perfection. This recipe is so simple it barely needs instructions.
RECIPE
- Make some brown rice
- Sautee sliced Green Zucchini with corn for just a few minutes over LOW heat
- Add a dash of Salt & Pepper
- Add some Cayenne for extra spice (optional)
- While you everything is cooking, grab a single Beet and spiralize it
- Grab a small bowl and add your rice and desired amount of black beans
- Tip: Soak and cook your black beans the day before, so that they are ready to go! If you're using canned beans, be sure to check for BPA free cans.
- Add on your Zucchini and corn mixture
- Top with fresh arguala and your spiralized beets
For dressing you can use a variety of options! Try fresh lemon juice, coconut aminos, tahini dressing, a raw veggie dressing, such as Jacobs Raw, or even add in some fermented sauerkraut with its juices (thins makes for a perfect tangy dressing).
